January 2021: Tuller: cow’s milk from yeast

Prof. Tamir Tuller, Edmond J. Safra member (Engineering), plans to produce cow's milk from yeast. Prof. Tuller, in collaboration with foodtech entrepreneur Dr. Eyal Iffergan, created the start-up Imagindairy. It aims to produce milk with all the important nutritional values of animal milk, and with the same taste, aroma, and texture, but avoiding the suffering that cows endure, and damage to the environment. By using models developed in his lab, Prof. Tuller believes that within a fairly short time, they will transform yeast to produce milk proteins in an efficient way that will enable affordable, high-quality industrial-scale, production.

 

The technology and development was featured in an online media in multiple languages, including English, Spanish, Hungarian, Russian, Chinese and Italian.
